The problem
Growing proportion of older adults in Europe
Our approach is particularly relevant in the context of the European Union’s efforts to adapt social and healthcare systems to the rapidly growing ageing population and increasing long-term care demands. In particular, it addresses the prioritisation of long-term care (LTC), with a strong focus on preventive strategies and home-based solutions.
According to Eurostat, the share of population aged 65+ in the EU increased from ~16% in 2001 to over 21% in 2023, and is projected to reach nearly 30% by 2050. (source)

scientific HYPOTHESIS
Central Research Question
The central scientific hypothesis of the project is based on the assumption that controlled structural transformation of protein matrices during fermentation may alter the nature of their interaction with the metabolic systems of the organism.
The project explores the possibility of studying these interactions in combination with a standardized sensory stimulus, allowing the recording of responses of the autonomic nervous system.The key research question of the project is to determine whether a structurally modified protein matrix induces measurable changes in physiological parameters when used in combination with standardized sensory stimuli.
